This is my sourdough cheat sheet, on the fridge with a magnet. First I wrote it all down as notes after reading through the "classic country loaf" section of the book Tartine Bread a few times, and conversations with my friend Ruth.
It started out as a reminder for what to do, and lived on the fridge for the first year or so of baking, though it's memorized now so I retired it in favor of more fridge art. Feel free to print it out for yourself, from the photos above (if you want color) or download this PDF version.
