This is my sourdough cheat sheet, on the fridge with a magnet. First I wrote it all down as notes after reading through the "classic country loaf" section of the book Tartine Bread a few times, and conversations with my friend Ruth.
It started out as a reminder for what to do, and lived on the fridge for the first year or so of baking, though it's memorized now. Feel free to print it out for yourself, from the photos above (if you want color) or download this PDF version.
