This summer cobbler is from my mom's good friend Ms. Arlyn - it's really easy to make and super buttery. 🍑 She made it for us growing up when we'd go over for dinner.

It's a favorite to bring to summer bbqs or potlucks, everyone loves it. (That's why I'm writing this down as a blog post. 🍓)

Ingredients

  • 2 cups fruit (strawberries, blackberries, peaches - whatever you want)
  • 1 cup sugar (split in half)
  • 1 stick butter
  • 3/4 cup flour
  • 2 tsp baking powder
  • pinch salt
  • 3/4 cup milk

Making the cobbler

Put fruit aside with 1/2 cup sugar in a bowl.

Turn oven to 350 F and melt the butter in the pan you're going to bake in, in the oven as it heats up. (I bake it in a ~6"x10"x1.5" Pyrex pan, but you have a lot of wiggle room here to use other sizes.)

Make batter. (Using the rest of the ingredients. Mix the dry stuff together first before you pour in the milk.)

Pour the batter over the melted butter -- don't stir!

Put the sugary fruit on top.

Bake for 50-60 min.
